In the field of fermented foods and beverages such as soy sauce, miso, sake, and shochu, Fujiwara Techno-Art has pioneered the technology for the fully-automated, unattended manufacture of koji, or Aspergillus oryzae, a mold used in the fermentation process. This unique technology has gained such wide acclaim that the company's machines are now used to produce about 80 percent of all machine-produced koji in Japan.

As Japanese cuisine spreads across the globe, we are now exporting our machines to more than 20 countries around the world. Furthermore, utilizing the expertise we gained in the field of fermentation, we are developing machines for other types of food production, and for the biotechnology field, exploring new possibilities in the fascinating world of food.
