Innovation of Fujiwara Techno-Art's DNA
Sake, shochu, soy sauce, and miso ― the traditional fermented foods and beverages of Japan… Fermentation technology developed through 1,000 years of improvement, innovation, and tradition… In harmony with the passing of the seasons and always working together with nature, craftsmen from olden times have made fermented foods and beverages from the rice, soy beans, and wheat produced by the land. They could achieve this by skillfully controlling the workings of koji, or Aspergillus oryzae, yeast, and other microorganisms, the mysteries of which have yet to be fully uncovered by science. These traditional fermented foods and beverages have continued to enrich our lives and bring us pleasure, right to the present day.
In more than 70 years of Fujiwara Techno-Art's history, we have developed production technologies for automating and systematizing the production processes for fermented foods and beverages and made possible the large-scale, high-quality production of such fermented foodstuffs. Our technology preserves the unique characteristics of the raw materials by enabling the microorganisms to work to their maximum capacity.

As in the past, Fujiwara Techno-Art will continue to advance fermentation technology into new frontiers in order to pass down the tradition of these wonderful fermented foods and beverages for another 1,000 years into the future.
Creating a sustainable environment for the 21st century: towards a recycling-based society
The world is undergoing a major transformation ― from one that consumes large reserves of fossil resources to one that is sustainable and recycles its resources and reduces waste. In this recycling-based society, biotechnology is used to convert plants and other organic resources into various day-to-day materials, including clothing, consumer goods, construction materials, industrial commodities, and energy. These materials can be recycled and reused as resources through the actions of microorganisms and solar energy.
Fujiwara Techno-Art has already developed the technology to control microorganisms to mass-produce commodities of value from grains and other organic resources. We believe that our technological DNA can help develop and establish a number of the fundamental technologies needed to build this recycling-based society.
Using the expertise that we have developed in the field of fermentation technology, and in cooperation with universities and other advanced research centers, we will further advance the fundamental technologies needed to build a recycling-based society, thereby opening new possibilities within the world of biotechnology based on our process engineering, plant engineering, and systems engineering.
Through these efforts, we will contribute to making our 21st century world a secure and sustainable place where we can live with a true richness of heart and mind.
